Leftover Turkey & Rice Soup

Ingredients
  • 4 tablespoons butter
  • 1 onion, chopped
  • 3 - 4 carrots, sliced
  • 2 celery ribs, chopped
  • 2 cloves garlic, chopped
  • ¼ cup flour
  • 5 cups chicken broth
  • 1½ - 2 cups turkey, cubed
  • 1 tablespoon fresh thyme
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 1 cup whole milk or half & half
  • 1 tray of Veetee rice
Instructions
  1. Melt butter in a large pot.
  2. Add the onion, carrots and celery and cook on medium high for 3 - 5 minutes until the onions are soft and translucent.
  3. Add the garlic and cook another minute until fragrant.
  4. Stir in the flour and cook for one minute, stirring constantly.
  5. Add the broth, turkey, thyme, salt & pepper and bring to a boil.
  6. Reduce heat and cook for 10 minutes.
  7. Stir in the milk and Veetee rice.
  8. Adjust seasoning as needed and serve.
